Dennis Collins
Managing Partner – Food & Beverage, Marketing

Chef Dennis Collins has been in the restaurant and hospitality industry for 15 years. Born in Staten Island, New York, Dennis earned his Culinary Arts & Restaurant Management degree from New York Restaurant School in Manhattan. He went on to open a catering business and became a teacher, educating students in culinary arts from grades 5 through college level. One distinctive moment in his career was being part of a culinary team led by Chef Jean-Georges Vongerichten that cooked for the 75th Anniversary of Time Magazine. Before East Ocean Bistro, Chef Collins was employed at Piper’s Landing Country Club, Martin Downs Country Club and Tesoro Country Club among other restaurants along the treasure coast. His passion is “to provide high quality food with excellent service at a fair price.

John Delisio
Managing Partner – Finance & Operations

John was also born and raised in Staten Island, NY. He holds a Bachelors Degree in Management from the University of Scranton and an MBA in Finance from Syracuse University. Prior to East Ocean Bistro John worked for a myriad of financial institutions in New York City. Even with his business background, John has always had a passion for food and competes yearly in an amateur “Iron Chef” competition. His dream was to own a restaurant which would combine excellent food with a warm and inviting atmosphere.

Todd Rosson
Executive Chef

A Florida native, Chef Todd Rosson brings his talent to East Ocean Bistro after 18 years of practicing his craft at some of the finest places in the area. While attending Florida Culinary Institute, Todd took several jobs so he could learn the many methods of cooking while building his own style. Throughout his career he has worked at several establishments including Eagle Marsh Golf Club, Greenside at Club Med, Topanga Distinctive Dining, Cobblestone Café, Kotobuki Japanese Restaurant and Martin Downs Country Club. Todd’s culinary creations are known for their originality and delectable flavors which please any palate.
